If you like to eat healthy, but you also enjoy delicious food, a grilled fish with lemon butter might be just the thing you need. Fish has a very light meat that will feed your hunger without making you feel bad afterwards. The lemon ads a touch of acidity, just enough to give this dish an amazing taste. Start by making the lemon butter by mixing up butter, lemon juice, dried thyme, salt and pepper. Boils some spinach leaves in a sauce pan and then grill the fish with oil, salt and pepper. Start plating with the spinach, the fish, some tomatoes, the lemon butter and garnish with a few slices of lemon.
